As Sonny said above any of those thermometer/probe combos are very good ones.
It just depends on how fancy you want to get and are willing to spend.
I use a ThermoPro TP20.

Your understanding of the P-setting is correct. In cold climates/temps, use a lower P-setting number like 2 or 3.. P-setting number 4 is the factory default. Never use P-setting numbers 6 or 7.. If You do, your grill will have a greater chance of flaming out. P-setting 5 is great for smoking and for warm/hot climates... It’s always better to ask questions and avoid mistakes then to jump in blindly... Going off what’s said on info commercials and later regretting it.. I know You’ll enjoy your Austin XL.. It’s a great grill.

So right now I'm smoking a top round and its pretty cold out( high of mid 20s') … which P setting would I want? I want to get the most most flavor I can but I dont want it to go out?

I would start with P setting P2 at start up/preheating... Preheat at 350* degrees for at least 30 plus minutes to ensure your grills temps are and stays stable. After the preheating is completed, then set your grill to your desired temp. If you want to start your cook off on Smoke mode, I would instead start your cook at 200-225* instead of using the Smoke mode... at 200-225* degree grill temp, your grill will still produce smoke for your cook. Smoke mode and cold temps are not a good mix for pellet grills... If your grills temps goes up 20-30* degrees during cycling, that’s fine. Now if your grills temps swings way past 50* degrees or goes down 50* degrees, then use P setting P1 or P0... The P settings can only be adjusted at start up... The P2 setting is to give you the most smoke possible considering the 20 plus degree temps You’re cooking in. If You keep your grills burn pot clean using a shop-vac, then you should be fine. If You notice your grills temps dropping below 140-150* degrees, or you see the control/temp screen flashing, don’t turn your grill off and back on again. Turn your grill off and unplug it. Then safety inspec your grills burn pot to ensure your burn pot hasn’t overflowed with pellets... Safely.... Which would/could cause a flameout fire due to smoldering pellets in your burn pot or at the bottom of your grill. These issues are all possible when using the wrong P setting, not keeping the burn pot clean of old ash from prior cooks, cold/freezing weather cooks and not preheating your grill properly. Post back and let use know how your cook turns out...
