First Cold Smoke On The MES 40"

Using my Amazn with apple in my MES 40.

Going to cut the blocks in half.

I have had smoked Havarti in the fridge for 2 years.

I have some smoked cheese that is at the 3 year mark. I have 50 LBS waiting to get in the smoker.

Nothing fancy just smoked cheese.
