hello all, work keeps me rolling so i haven’t been able to smoke in a good while, I’ve been stalking you guys though and have seen some good things!

I’m doing my first butt, as the title says. Rubbed with some random spices and plenty of sugar and thrown in my MES 30 at 230*. Got my thermpro stuck in and my amzn rolling smoke

Quick question on the amzn, is it possible to light the pellets too hot? Yesterday in my practice session I had tbs but today it is definitely a thicker white.

Also, how deep should i stick the probe of my therm? I’ve got it stuck in the fat side down, bottoming out against the bone, but the temp seems to be rising fairly quickly in it so maybe it is too shallow?

I’m far from being an expert on this but I do recall that the probe should not touch the bone. From what I understand the bone, especially if any of it is exposed, can act like a heat sink and transfer heat more so than the surrounding meat which could give you a false reading.

With the therm try going in from the side, not hitting the bone. As far as thick white smoke you may have had a small flair up and not smoldering pellets. Hope it settled.

Thanks for the help men.

My butt never/hasn’t stalled as of yet, but I’m sitting about 10 degrees from where I’d like so i bumped up the heat to hurry things along. I whipped up some of (spelling may be wrong) soflaquers finishing sauce. It’s good stuff!

Aaah it was ok. My thermo wasn’t in the right spot so when i thought it was the bright temp for pulled pork it was actually about 15 degrees shy. The sauce really picked it up but it surely wasn’t tender
