Preparing to do my first brisket tomorrow. I've done quite a bit of research feeling pretty confident. However, I do have one problem I have a small MES 35 and the brisket doesn't quite fit. My thought is to trim down the and possibly make burnt ends with it. So I guess the question is does this sound ok? Also any tips or tricks are appreciated.

I've seen some threads were they prop up the middle , making the whole thing shorter so it fits . You might try that before cutting .

Interesting. Any ideas how this was done? Ball of foil or maybe some kind of bowl...

So here it is. First brisket in the smoker. I used a small cast iron pot to raise the middle since it was too long thanks to chopsaw chopsaw . Rubbed down with mustard and some seasoning. Fingers crossed.

Hi there and welcome!
I'm not sure what happened to make it tough as leather.
Dry and tough = under cooked.
Dry and falling apart = over cooked.
Dry and brittle = burnt up.

If it was either of the top two I listed then crock/instant potting it with bbq sauce aught to make it good and enjoyable. Best of luck!
