Today I am smoking my first larger load of meat. Smoking 3 racks of ribs and a butt using B&B lump charcoal with a blend of cherry and apple wood chips. After my turkey disaster I am going to use as little wood as possible. I will update with progress pictures as we go along. :grilling_smilie:


Meat on at 7am
 
Looks like a good start but then what?? Did you eat too much and are napping? Food coma??
 

We'll my peaceful day of bbq'ing got ruined so I didn't get to focus on my meat. All the pork is off and safe in the fridge waiting for my co-workers tomorrow. My small sampling is telling me this is my best batch of Q yet. I know lots of folks frown on offset smokers but so far this smoker has held heat better than anything I've ever used!:sausage:
 
Sorry to hear your day was ruined but atleast you got some good eats cooked up successfully! i'm sure your coworkers will love it!
