I made up my own recipe of sauce, and rub. used tome Jack Daniels in the sauce but won't post a recipe until I've actually tasted it and survived.
Purchased my grill in the summer but haven't used it much so now my seasons ove and things are slower thought I would do a brisket since all your videos look so good and the meat so tasty.

Yes first attempt at Brisket. I did a regular beef roast in the summer just after I purchased the smoker/grill it turned out ok was moist and tender but was lacking a little in flavour but then I never used a rub, wasn't aware of them until about three weeks ago.

I did some ribs with my own concoction of barbecue sauce also in the summer they turned out well but I only cooked them for three hours which I thought was fine until I started reading all these posts by others who have been smoking for a while.

I have also cooked rib eye steaks again with no coating the were moist and tender but they took aver 20 minutes to cook because I could not ramp up the heat to a high enough temperature to sear them and cook for only 8 minutes (with my old gas barbecue I used to do steak 7 minutes each side) as the instructions which came with my grill recommends. Since there is only myself who likes steak I am thinking of getting one of those small stainless steel gas barbecues just for my steak.

That sounds like it would work.  I have two Big Green Eggs that I mainly use for smoking.  They do steaks fine, but I usually just fire up my Fire Magic gas grill.  That is quicker and less work.  Good luck, and have a Happy Thanksgiving.

Bigfoote, thanks for that link you posted!  Its very informative and has alooot of useful tips and techniques and is exactly what I needed.  I'm very new to smoking briskets, just finished my first one this morning.

Tried a prime rib roast and pork ribs a couple of weekends ago wasn't as successful as the brisket. The roast had more fat within it and there was some Grissel. I put it down to my inexperience in choosing meat for the barbecue. The ribs turned out very well.

What do you guys serve up with your smoke/grilled creations? Any recipes? I like garlic mashed potatoes, broccoli casserole, garlic sauteed mushrooms.

My next attempt I think will be a pulled pork.

BTW thanks for the link!
