Day one; Pressure wash inside of smoker. Then with 15lbs of charcoal heated smoker up to 500 degrees to burn any unwanted smell, oil from the steel etc.

Day two; Sprayed the entire inside with cooking spray, filled the water pan with 3 gallons of water and charcoal box with 15lbs of charcoal and small chunks of apple wood. With the damper on 2" ball valve open and exhaust at 30% open heated the smoker to 225 degrees(that was the hottest it would get with the water in the pan and it took two hours to get that hot) once the water boiled out of the pan I kept it between 250 and 275( trying to find right exhaust and damper controls for different temps). Total burn time nine hours between 225 and 275.

Agree on the water pan for the drip pan. The exhaust wide open with damper wide open will only get smoker up to 150 on temp. I think made exhaust way to big, even though I followed the bbq calculator.
 
Are you sure your temp gauge is correct ?
 
Yes, I check the drain pipe with a fluke temp gun when it had the water in it and it measured the same. Next time I will shoot the grate.
