Finally using new smoker

After much reading went with the Masterbuilt 560. Used it for the first time tonight after doing seasoning last night.
Learning the in and out. Used B and B lump charcoal and Peach wood chips.

Good looking yardbird there Darrell. Good color and looks juicy. What was your cooking temp?
 
Thoughts on the first cook…..
Buy the Masterbuilt wood starters make life a whole lot easier. Thanks to a few of you for that suggestion. And also to remember to pull out the block off plates (that makes you wonder then oops you idiot)
Heats up quickly didn’t take long at all to get to temp. Honestly was worried about temp since this is a first time with gravity feed. Used thermometer on display also kept eye on the app and used thermopro tc-16. The whole time stayed from 249 to 252. Lar 30 minutes I cranked it up to 400. Again watched the temp rise fairly fast. Leveled off about 408. Then started to come down and stayed around 400. Used the meat probe that came with it. When chicken hit 165 by probe checked it with instant read thermopro and it was within a couple of degrees of the probe. Skin was crisp unlike with the electric smoker. Actually seems like there is a lot of moisture buildup with electric smoker and not with this one. Maybe it’s just me.
I have been using a electric Masterbuilt for about 2 years. Main did I miss the charcoal flavor. Didn’t realize until ate the chicken. My son even said that chicken had more of a grilled flavor.
Still figuring out the wood chips. Mix in the charcoal put in the ash bin. Saw today some charcoal that already had in in the briquettes Apple peach cherry hickory pecan all the usual flavors. If anyone has tried those let me know what you think.
Bought mine already put together. Seems well made a sturdy. All in all first impressions are good
Actually can say surprising. Lot easier to use than I imagined. Few more quirks for me to figure out but will continue tomorrow night with chops and then Pork Butt on Saturday.
Again thanks to everyone here for the advice and suggestions. Also a big help to know I can ask anything and get some honest knowledgeable answers.
