Well, I finally got my MES30 yesterday and immediatley got it home and seasoned it. Seasoned up some baby backs this morning with my own blend and put in with some apple wood. Gonna try the 2-2-1 method using some fresh apple cider for the second part. Cant wait for the final product, my mouth is watering already. 
 
Sounds Great!  Can you share some Qview (pics) of your smoke and finished product with us?
 
Sorry, I didnt even think about taking pics of them. I'm so new to all of the blogging stuff. I'll make sure I get a few snap shots next time. They turned out really nice. I love the apple wood smoke and the apple cider gave them a really nice touch. I saved the juices from the tin foil after the second hour and am planning on making some smoked baked beans with it. I will definately get some pictures of that one.
