Finally..a spring like weekend...time to run the smoker!

We FINALLY have a weekend here in MN that will be at least somewhat more like spring. 45 on Saturday and 55 on Sunday.

I'm going to be running the smoker both days. Salmon, baby back ribs and a pork tenderloin.

I have some maple smoked salt that I'm going to use to brine the tenderloin.

The ribs can soak in some apple cider for about 4 hours then sit overnight with a dry rub.

It's the salmon I can't decide on. I though of soaking overnight in a brine of salt, water and lemon grass.

Anyone have some knock out recipe for salmon?

I suppose spring might be pushing it a bit....45 today...55 tomorrow...and snow on Monday night. It NEVER ends. But I do have the smoker going with a pork tenderloin today and I have the ribs and salmon ready for tomorrow.

Trader Joe's has some good pure maple syrup and that is what I'm going to use on the salmon.

Made a small mod to the smoker...two air holes near the base and two holes near the top to vent smoke. I bought a couple of magnets to cover the holes so I can control the air flow. So far, it seem to be working perfectly. Nice bit of smoke at 220.

This is only my second time using the smoker so I'm hoping it turns out OK. I blended some Maple and Burbon Barrel chips for today. I need to order an AMNPS next week.
