This is my first solo smoke as I’ve helped friends do it 4-5 times before. All the free time I have allowed me to buy a Kamado Joe Classic II and get into this.
I’m going to turbo smoke a 10.75 and 11.25lb butt starting at 9AM today.
1) I had planned on spritzing but have seen people say it just washes off the rub. I wasn’t going to do it. Then I saw a staff member say spritzing only helps when you’re going at 350 which is what I’ll be doing since I’m turbo smoking. Thoughts?
2) I’m going to foil at 160 since I’m pressed for time and I’m going to try adding honey, half a cup of brown sugar and a stick of butter on top of one butt just to see how it tastes since it seems so intriguing to me. But, I’m not using a rub that has sugar since I’ve read so much about scorched sugar on turbo.. think I need to worry with the Texas crutch sugar addition? Other thoughts as to my thinking?
3) When exactly am I throwing the butts on? When it hits 350? I don’t know why this simplest step has evaded me. Lol.
