i found it in one of DJs recipes

OK I just found the related thread thing.


Buttermilk powder---ill have to look in the grocery store-- i dont recall ever seeing it.

Butcher-packer does not list either item

It's a bacterial additive that adds the correct "bugs" for the curing/flavoring process in certain types of sausage/lunchmeats. Akin to the brewer's yeast used to brew...

I use Fermento in my summer sausage and it gives it a little tang flavor. I think.

It's hard to believe that butcher-packer doesnt carry it unless it goes by another name.

Fermento is encapsulated citric acid according to butcher-packer.com. I just got a replt to my email.

I also see that the buttermilk powder seems to be the same thing or does the same thing.
