what is it and does it go by any other name????

i found it in one of DJs recipes

OK I just found the related thread thing.


Buttermilk powder---ill have to look in the grocery store-- i dont recall ever seeing it.

Butcher-packer does not list either item
 
It's a bacterial additive that adds the correct "bugs" for the curing/flavoring process in certain types of sausage/lunchmeats. Akin to the brewer's yeast used to brew...
 
Do you folks know if there is another name for it by any chance?????

It's hard to believe that butcher-packer doesnt carry it unless it goes by another name.
