What type of wood are you using? Foil or no what seasonings?

I am using apple wood and I don't foil I use a simple rub and mop my ribs with a coke katchup mix

Sounds interesting looking forward to the finish

It is a cut of the bottom sirloin it is to the west coast what brisket is to Texas

Hey fdannyw,

What size of WSM is that? I like how the two racks fit in and still have room for another or just like you, add something else to it. AND, you im guessing you still have some room under that? on another grill/grate?

And by the way, those ribs look amazing! keep on smokin my friend!
