The wife agreed to let me cook my own Father’s Day feast....so I thought I would share the journey in full color!!!

Started off with some Prime Fillets :-)

Early this morning, I prepped them by removing all the silver skin and fat. Then each got wrapped with one slice of bacon and dusted with SPOG.

At noon, I dropped a beef rib bone and a slice of bacon in a qt of beef stock, a bit of Demi, and 1c Marsala....then simmered covered for 5hrs.

After the 5hrs I dropped 1/2c baby carrots, 1/2c celery, 1 small onion, 3 cloves of garlic, thyme, rosemary, basil

This simmered for 50 min then was strained....don’t toss the rib bone, it is pretty tasty!

Some artiys boiling in some salted, onion, garlic water (15 min bottom down 15 min top down) covered.

I like to roast bacon wrapped fillets so the Memphis Pellet got pre-warmed to 530 degrees. When I take the grill this hot (it will go to 600) I always clean it good before and make sure all the oil burns off (if not it makes a nice fire)....I even spray a little water to steam clean the deflector.

Ok finally the fillets go on!

I roast them for about 18min total tuning them about every 3 min and brush them with butter at mid cook. This way the bacon gets crispy.

Pulled at IT 130 and resting.

The fillet in a sauced plate garnished with fresh cut herbs....just the perfect way to dress a fillet!!!

Now that is a beautiful hunk of beef.
And that sauce, OMGosh to die for, real nice.

Many thanks chilerelleno! I'm sure you have noticed in my past posts but having a good sauce is how you make "good meat" into "no words can express it meat"

Man that's a good looking meal! Points for sure. Hard to beat a good filet. I bet it just melted in the mouth.
- Thanks and agreed, I had a work function at a local restaurant last week and had a SRF Wagu Filet and I thought man I got to have another one of those, so this was my version.
