Hell yeah Derek those look damn good! I have never done PBBE before only used belly for bacon but I think this needs to change. You knocked that one out of the park my friend!

Great job Derek!!! Looks fantastic.
I really like the honey and jalapeno jelly you put on them instead of the usual BBQ sauce (afraid I'm guilty of that).
I generally only eat pork belly when its turned into bacon--too much fat for me--but I gotta say, yours looks delicious.

Happy New Year All,

This is my first step-by-step post, so hopefully I don't bore you.

First, a pic of the 4 pound pork belly I picked up from the butcher yesterday:

Second, I cut the pork belly into about 1.5x1.5 to 2x2 inch cubes:

Third, I made a quick rub that I really enjoy and coated the pieces using a freezer bag:

Next, I stuck them in my MES 30 until they hit about 180°. I had the MES at 275° with an A-Maze-N tray half filled with GMG Fruitwood pellets.

Next, I placed the pieces in a foil pan
and drizzled honey and a few tablespoons of green pepper jelly over them. Made sure they were well coated, placed heavy duty foil over the pan, and stuck them in my oven for about an hour.

After being in the oven for about an hour, the finished product:

I will say that this was probably the best thing I have smoked and maybe even made in my life. These burnt ends came out fantastic and if you haven't tried making them yet, you should give them a try. You will lot be disappointed.
