3rd times a charm.  After 2 pork butt smokes that were 'good' and 'decent' respectively, today things finally came together for me.  Good thing too, those first 2 were just for home consumption, this last one was for a family bbq.  I have to thanks some of the other members here who gave me advice on my smoke last week + a lot of credit to SoFlaQuer for that great finishing sauce + the carolina bbq sauce.  Tweaked it just a bit to my taste, but it was mostly his.  Also Dutch for the famous baked beans recipe.  This one was a family favorite already and they requested I do it again :)

Butt had excellent bark, and was moist & flavorful all the way through (last one had good bark but rather bland inner meat).  Got lots of compliments, but some of the best were-  a comment from a big bbq fan that she thought it was better than one of our best known bbq spots here, and the best compliment- 2 'vegitarians' saw it as it was being pulled, and decided they had to have some, hahaha.

just a mini q view, by the time I had a spare minute to take a pic the first tray was already on it's way to disappearing.  Need to start remembering to take earlier pics

Sounds like you're getting it all figured out. That PP looks fantastic!! Converting vegetarians. Priceless!!!!  LOL!!!

I think it was a few things.  For one, I think I nailed the rub this time- first time was too salty, second I put too little trying to correct it AND I put too much spice since I accidentally swapped tsp for tbsp haha.  That wasn't as much of a problem since I like spicy food, but this rub came together much better than either of those.  Also started the fire using the 'ring w/ a gap' method, instead of a complete ring w/ a hole in the middle for the lit coals + used fewer lit to start.  I don't think that played much of a difference other than making it a little easier to control temp in the beginning.  The major difference was probably that I was more patient & built in more error time for how long it would take.  I think I took my last ones off a little too early and didn't give enough time to rest.  This one was double foiled and in a cooler with towels and NO empty space for probably about 45 min or so.  

Looked SO juicy as it was being pulled- it took way more discipline than I usually have not to just start putting pieces in my mouth as I was pulling it.  I usually do, but everyone was watching me.  I call them 'vegitarians' with quotes because they only switched in the last year or so- a younger cousin and her friend that just graduated from one of those granola colleges haha.   They aren't those kind of hardened 'activist' type vegitarians.  
 
Good looking Q!!!  Glad it all came togather for you at family time.  I always worry about that, what will family think of this?  Most times it just comes out fine.  Keep on keeping on.  Steve
