Did some eye of round jerky on the smoker using Duncan Henry recipe turned out really good I had it in the marinade for 3-4 day before it went on the smoker …. Tried with the grain against the grain and they’re both fantastic! Really love the Hobart slicer being able to cut such large slices!

That's awesome . I like the looks of with the grain myself .
Great color on that . I hold mine 3 days before drying . I think that adds to it .

I don't mess with youtube much but always enjoyed Duncan Henry's videos. He's a younger guy in rural Saskatchewan who has a meat locker.
I've never tried that recipe. Sounds good but I'm hesitant to use vinegar with cure #1. I don't know for sure but I've read acidic ingredients can burn up the cure before it has time to do it's thing. I'm more than willing to be wrong.

Followed the recipe to a T it’s awesome! Duncan’s recipes are top notch he’s an awesome resource I recommend watching he’s first 20 videos and you will learn so much and save so much time from a professional.
