I'm going to smoke a tri tip for a party tomorrow. I have rested brisket for as long as 4 hours or so (wrapped and put in a dry cooler) no problem. I'll need about 1.5-2 hours of rest as I'll be traveling a ways. If I remove it at 125 degrees will the roast rest that long without going well done?
 
Yes, though you may end up with medium well by the time you serve. Delicious none-the-less. I've done this many times, cook up a dozen, wrap tightly in foil and pack in a chest for several hours.
 
I reverse sear my tritips and wrap to rest. I have monitored internal temp while wrapped and have seen @10 degree increase at most. I try to wrap mine @125-130. I have let them sit for 2-3 hours and temp decreases after 45-50 minutes.
