I am posting from the Philippines, I was looking for Pink #1 cure found it relatively cheap. Now I am looking for Tender Quick I found it, not so cheap, almost $45.00 per bag. Due to the shipping from the USA. Looks like I won’t be using TQ...

Hmm. If you can get cure #1 cheap enough, I'm surprised you can't get MTQ. Most places that carry one carry the other. I'd try around to different places :-)

That's a dark red color compared to what we have in the states, what percent nitrite is in it?
As far as the TQ goes, you're not really missing anything, but many will disagree with me.

MTQ has nitrate in it, which you don't need.... Nitrate is needed when you cure meats that will not be cooked and eaten "raw".....

cure #2 is sodium nitrate.....use for long dry curing of salami and hams and such
