The way I look at it is that you can give the customers the option of spicy or sweet. Besides that do it your way. I know that catering companies make it their way. There will always be someone that isnt happy.
I hear ya, 1/2 my family, and my wifes family like to eat shoe leather, while the other 1/2 and I like medium rare, so I either buy huge roasts and cut them in half, or buy 2 smaller roasts, and cook them both one at a perfect medium rare, and the other flavorless shoe leather
I invite people over to my house to eat as my guests, and cook accordingly as a good host.
If they like their steaks cooked more done than I like mine I toss theirs on a little earlier. If they like food that is less spicy I tone the food down from my tastes(I can always graba bottle of hot sauce to tune mine up). The list goes on. A happy guest is a good guest, and these folks are my friends 99% of the time, no reason to be difficult & to not make them happy.
With the above said I will not alter a menu to accomodate a vegetarian, luckily I dont know any, and I think my friends & regular guests would know better than to bring one over to my place.
