Had a hankerin for some beef ribs. These were all I could find. Not a whole lot of meat on them but they sure tasted good!

3-2-1 method. Todds Pitmaster Choice pellets in the MES 30 at 230'

Pulling the membrane

A light dusting of my favorite seasoning for beef. (I was skeptical at first but have come to really like the mesquite seasoning!)

Vaccuum sealed and in the fridge for 6 hours.

Out of the smoker for 3 hours getting ready to foil with a couple pats of butter and beef broth meat side down.

All done... They were a great snack and I didn't share!
I did make some homemade chicken noodle with vegetable soup though (not shown) that Mrs. BEV requested.
 
Yeah sauced... I bought them BECAUSE of the price. But you can see how skinny they were. I would have happily paid twice that if there was something more on them. You can literally see through them in the 3rd from last photo.

They sure look good from here.
Every once in a while the local Publix has boneless rib eyes on sale.
Then the bones are pretty cheap & do have quite a bit of meat on them.

By the way I did probe these with my instant read and pulled them out of the foil at 197' called them done when they hit 203'. I think I hit the mark as beef ribs go.
 
I like that rack of ribs. I usually do short ribs (the big brontosaurus type) but these would be quicker to cook and I'm sure had great flavor. Nice find, well cooked.....POINT

Thanks troutman. Ive been looking for short ribs too. When I do find them they are cut into halves or thirds. I usually braise those. Getting them whole has been a challenge. Thanks for the like.

Anirexic ribs. Ha!! At least you can get beef ribs. I have to drive 3 hours round trip to get any here.
Not much meat on them but you sure made good use of what you found. They look delicious.

3 hours! Im sure the donating cows aren't going to complain if you could get them closer either. It's real surprising what mostly bone goes for. Thanks for the comments and like.
