End of Summer Seafood Mac-n-Cheese

Well the end of summer is fast approaching, and we had a hankering for some seafood Mac.

The dish starts off with two lobsters. Both are just under 1.5 pounds. I had the store steam these for me. One less pot for me to wash.

Next its grating time. An 8oz block of smoked Gruyere Cheese, and about 14 oz of Cabot extra sharp cheddar.

Fried up 8 slices of thick cut bacon. Then I cooked the scallops, and shrimp in the bacon juice. Total was a pound of each. The scallops were farm raised, and the shrimp were the 50/70 count wild from LA.
Bacon on the bottom, scallops in the middle(hidden) and shrimp on top.

Made a roux with a stick of butter and a cup of AP flour. Once thickened I added 4 cups of a warmed up combo of milk and half-n-half plus a couple twists of pepper. Stirring until I got a nice thick mixture. Then the noodles were added. One pound of small shells - cooked just before they reached al dente. After the seafood was gently folded into the mixture.

I made two pans one for us(the bigger one), and one for the kid and his family. Topped off the pans with a little cheddar.

Edit: I added the cheese to the mixture before the noodles.

All local markets now steam them in store for nothing.Makes life easier when you just don't want to deal.

Never had Lobster myself . Had my share of mac and cheese though .
Looks good enough to try for sure . Nice work bud .

I haven’t made seafood Mac n cheese since living on the west coast and using basically free Dungeness crab
Have you tried smoking it? I smoke mine in the pellet pooper for and hour so

Wow Rich, I'm kind of surprised to hear you've never had lobster. My favorite way is to dip it in liquid butter. Ummm so good. You should put it on your bucket list. You won't be disappointed. Thanks for the kindly words.

That is ASTOUNDING!! The flavor has to be off the hook. You picked two cheeses that would be top notch to my taste buds too.
Thanks Jeff it was off the charts good, The smoked Gruyere I found in a different local grocer and it was good.

+1; Wrong cheeses could ruin it.
Appreciate it Sam. The correct cheeses make all the difference. Valletta wore out it's welcome in the 70s.

Appreciate it John, The grocer had King crab legs, but at 24/lb I walked on by. I haven't tried smoking it yet. It seems mother nature doesn't play fair whenever I'm making it. One day I'll get her to cooperate.
