ECB Question

I used my ecb yesterday for the first time in about a year or so. I have been useing my GOSM, anyway the ecb is straight factory, no mods. My question is... Can I get rid of the water pan to get the temp up? When I used it yesterday I couldn't get the temp hotter than about 160. I've heard of people using sand instead of water to regulate the heat so the water must not play that big of a role in keeping it moist in there, or does it. I figure I will mop a little more often than normal.
 
ya cub loose the water pan-It dose catch greese though-I get hotter temps without it-ain't tried sand yet but I gonna
 
I did some more mods to my ecb this morning..added some more holes to the side of the charcoal pan.....and "borrowed" the water pan from a Brinkmann "all-in-one" thingamajig....the pan was a bit bigger than the normal water pan....and I have fought all day to keep the temp up high enough.

Finally decided when I foiled the ribs to change back to the "normal" water pan, and it seems that temps are climbing.....and are also a little more predictable.

I have yet to try the sand myself...I think with the "air flow" mods I've already made...the sand just might make it even easier to keep a steady temp.

remove the pan and your grilling, gotta have the pan in place.
Sand helps stabilize the temp but sounds like your having air intake problems.
 
Is this Electric or Charcoal? I have gotten my charcoal ECB to 400º after some mods.
Sand will help bring you alittle higher temps and alot more constant temps. Water is there for alittle moisture, but more to control temp spikes.
