Hi Folks,

Living in the Netherlands and decided to do pulled pork. I asked my butcher for a boston butt and in the pics this is what I have. For beef the dutch definitely butcher the animal in a different way. Apparently same with pork.

So my questions:
In US terms what would you call this cut (am used to seeing the bone in the center of the butt)

Based on this cut, how would you recommend I explain to my butcher more precisely what I am looking for.

Any advice on the cook? I plan to just go with a traditional pulled pork cook but open to ideas.

Thanks in advance!

If you can show him this, it will help to tell what part of the animal you want. Pork butt or shoulder is the cut at the top right behind the head in the drawing.

Do you happen to know which part of the animal he cut for this piece of meat?

Hope this helps.

I'm sure you can do a search on the interwebs and get it down to the details but the "Butt" is actually the shoulder?

Great info folks. It does look like a good piece of meat and was running around 24hours ago. However, not what I was hoping for. After your posts I did some digging and found a site here that seems to sell the correct cut but also sells a "boston butt" cut that looks like the top half of what I have...

I think I have figured out why every time I have eaten pulled pork here I am decidedly underwhelmed...they must be using a leaner cut...

Great country, the Netherlands, but dang I am missing the food I like. I have people from the US that move here bring me cans of Bush's BB to make Dutch's Wicked Baked Beans...Ha "Dutch's"... the irony.

I'm with Ray . Looks like you have a cross section of one side of the back .
