So I liberally seasoned some pichana steaks and stuck them in the fridge for an overnight brine. I’m gonna sous vide tomorrow for dinner. Never really dry brined before, safe to say no more salt needed before I sear? I’m assuming I just pepper and sear but want to make sure. Thanks
