Have not run enough to freeze yet so I gotta ask. Don't the brats plump up when cooked? Seems like the freeze then vac seal is a fools errand.

The freezing process expands the casing to some degree leaving some room for expansion during cooking.

Freezing first, a least partially, keeps the vac sealing process from squirting the meat out of the casings with standard vac sealers. You don't need to worry about that with a chamber vac, though.
