So I've read and read and read about it and have decided to try it one time with what I think is the easiest way for me - using the UMAi bags. I have a half boneless ribeye, choice, and I'm going in the fridge for 4-5 weeks. The bottom of my garage refrigerator gets into the mid 30's easily so that shouldn't be a problem. My question that I can't seem to find an answer to is do I need to use a fan with the bags?
 
As long as your garage fridge is a fairly modern one (i.e. not from the 1950's), then no, you should be fine. I've dry aged with Umai bags many times in mine.

I use UMAi allot.

I would also suggest not using your garage fridge because if you live in a colder climate the fridge will not operate right and can freeze your product.
