First try....

Smoke/cook/dry it Thursday.

If it turns out, I will try making some from my backstrap.

Give this technique a try. Like Colt 45, works every time!

Out of cure and rinse with cold water
Dry with paper towel
Season with black pepper, onion & garlic powder
Dry at least overnight in the fridge uncovered on a rack
Smoke
Again rest in fridge uncovered over night uncovered on a rack
Wrap in plastic wrap and age for 5 to 7 days.

Soaked for 45 minutes in cold water on Friday evening.
Dried with paper towels, coated with onion powder, garlic powder, coarse ground black pepper and some cayenne.
In the fridge.
Cold smoked for 12 hours with hickory yesterday, then rested again overnight.

In my preheated (125 degrees) MEB at 0700 this morning with hickory again.
Internal temp of meat was 38 degrees.

Bump up temperature in around 30 minutes.
