Dove sausage/Morel stuffed Canadian Bacon

I really liked the last venison breakfast sausage stuffed canadian bacon I smoked a while back...so decided to try it with some of Texas Hunter's... Ken's dove sausage. http://www.smokingmeatforums.com/for...d=19616&page=2

I used the same method as last time...butterflied the loin and used Mortons tender quick and sugar for the cure...


I cured for 3 days and soaked in cool fresh water for 2 hours....

rehydrated some morels....



Browned and cooled some of the dove sausage...



Topped cured bacon with the cooled sausage and morels....



rolled and tied...



Into the smoker with a bit of hickory...







It came out good! I will definately be making this again.

Wutang, I like both the venison sausage one and this dove sausage CB.
The venison was a breakfast sausage and this one has a little bit more spice to it. If that makes sense.
