dont know what to BBQ??,need new recipes/ meats!

This weekend I want to smoke/bbq something but don't know what to have. I want to keep the total time around 6 hours, so big meats like brisket or shoulders are out. I'll probably do a rack or so of ribs at the same time, just well... because... maybe throw some wings in as well, But I want to try something that isn't average.

what all do you guys got! I've done wings, whole birds, ribs, shoulders, butts, briskets and hams but I'm looking for something different! I thought of meatloaf, tenderloins, jalapeno poppers but nothing really is "Jumping" out at me.

Any suggestions would be awesome!

*** in my last post I have a poll to see if you like case-less snack-sticks or snack-sticks w/ casing... could you please go over and vote on it, if you want to! reason I'm doing it is I know I have a hard time deciding if I want to make one or other due to the fact I only have a jerky gun/cannon and you can only get maybe 1.5 to 2 foot of casing on the nozzle. so with casing is more of a hassle.
 
Every time I come to this site I get overwhelmed with inspiration for my "next cooks" list. You are unique my friend!
With that said, Al and Bear have great inspirational lists, as does Jeffs almighty list. Surely you can find something there that's out of the ordinary. For me, dabbling with cured meats takes things to a whole different level of smoking. Try your hand at curing then smoking a whole turkey (or chicken if you prefer) or turn a brisket flat into pastrami or make a pork butt or loin into ham or buckboard bacon or Canadian bacon, etc. But if you are new to curing, please read carefully, understand, and follow the recipe and directions exactly.

If all I had was a jerky cannon I probably wouldn't bother with casings. Nothing wrong with that. Sounds like a sausage stuffer should be in your wish list.

Try the meatloaf you can't go wrong - this is one great meal - stuff the loaf with any type of cheese and prepare to be awwwwwed - you might even come out on the other end not understanding why you didn't try it earlier. PS - make sure to make a glaze.

Tri tip. Take it to about 125 to 130 plus rest time should land you at 135. Feel free to sear
 
I'll second the tri tip, if you can find one in PA. Sam's and Costco probably have them. Out here, they are as ubiquitous as ground beef. Buy one today, trim the fat down if necessary, dry brine it by sprinkling it with some SPOG or Montreal Steak Seasoning, vacuum seal or wrap tightly in plastic wrap until ready to use. Smoke low n slow until 125F, then reverse sear on a hot grill. I've got one almost thawed in the fridge for this weekend.

Alright third strike, between you, Al's post and Malcolm Reed and a "bacon explosion"... i think some type of meatloaf it is. Now i just gotta decide which one to make...

I haven't had time to run to the store yet, professors dont understand the time and dedication it takes to smoke some meat! Im just doing a rack of ribs, wings and some homemade brats i did up.... next smoke will definitely be something better!
