Forecast is rain, rain, and more rain. Had invited several friends over for bbq sat. I have been wanting brisket since it has been several years since i cooked one. The wife decided a long time ago that she no longer liked brisket for some unknown reason even though it used to be her favorite smoked bbq meat. What to do? Smoke a brisket along with a couple of boneless turkey breasts. Maybe she will get the desire fir brisket back if she tries it. Decided on turkey since could smoke the beef hot and fast and turkey at same time at 275.

Decided to use the lang stick burner due to the rain and not having good cover for the pellet pooper. Had storms overnight and i woke up at 4 am and didnt hear rain. Wasnt planning on getting up that early but decided to get going since having a break between storms. I had prepped the smoker and hauled wood on the perfect friday we had so it was ready to go. Just add flame from the weed burner. Got the fire going and temp Leveled out at 277.

Bought the 20 lb packer from costco a few days earlier and prepped it friday afternoon. Surprised to see costco did not carry prime packers anymore. I trimmed the fat layer on the flat as best I could but was not very thick. I also wanted burnt ends that wife also decided she didnt like. So separated the point from flat leaving an inch or so attached. This allows more rub on the meat. Wrapped it up and in fridge overnight. Morning of applied W sauce and layered two different rubs. Onto the smoker.

Then the rain started again. Lotsa heavy big drops with thunder and lightning. Glad i didnt wait. Had the therm in a plastic box with a hole in bottom to thread the leads through. Using a signals and it stayed dry. Then the temps started dropping. Dropped all the way down to 190. Crap. Was my therm bad, what the heck. Never had that happen before. Have cooked many times in the rain. Went out to check on it with the umbrella. Decided to crack the firebox door. That helped some. Then added extra splits too, double what usually do. That did the trick. Took an hour to get it back where needed to be. Rained til about 11 and back to the normal two splits. It was cooking quick.

Packer hit 172 at noon. Put it in aluminum pan with little water and covered the top. Added cpl splits and went for a walk after a bit. Git back half hour and checked temps. Packer was at 203. Crap. Perfect for the flat but not great for the burnt ends. Was supposed to separate the point at 195. Oh well. Cut point into cubes, seasoned more and sauced. Put cubes back into smoker and the flat into cooler with towels. After half hour took cubes out since didnt want to overcook. Put those into cooler too. All was done by 130. 20 lb packer in 8 hours. Put the ABTs on at this time. They were donein cpl hours.

Got the turkey breasts out of the brine i had prepared the morning before. Rubbed em downand onto smoker at two. Cooked to IT of 157. One took hour and half other was two hours. Into the cooler. Nothing else will fit.

Still had to cook the beans. They went on at three. Done at five.

Sliced the brisket flat and turkey breast and ready to chow at 5. We were also having crack potatoes and slaw. For dessert had cherry dump and ice cream. It all turned out delicious. The wife did eat some brisket and liked it. So may she wont say no next time i want to cook one. It did stop raining around lunch and turned into a perfect day.
