Hey All,

Fired up the smoker with the ribs (3 ½ down) and brisket from the local store that I discovered has a great meat department (Breaux Mart). The butcher there cuts the ribs in the “Kansas Style†with the trimmed parts in with the ribs, skirt and all. When I asked if they were injected with any “brothâ€, he laughed and said you have been shopping at WalMart, and assured me that none of their meat has anything added. The brisket was very limber and looks great. (You can tell I have taken Jeffâ€[emoji]8482[/emoji]s first E course) LOL. Learning and using the knowledge I have been getting on the forum.

Here is a picture of them going in the smoker. Will add a picture when they come out.

As promised, a picture of the finished ribs. Almost did not get to take a picture. They were falling off the bones and the smell was intoxicating. My keyboard may have a little sauce on them from my fingers. They are tender and juicy and this is the best I have smoked, so far.

Brisket is still in the smoker with baked beans with the rib skirt cut up and added to the beans.

Man-oh-man!!! That looks deeeeeelicious!!!! I can honestly say that those are quite possibly the best lookin' ribs I've seen since...well...last Sunday when I was pulling them from my own smoker!!! :twisted:

Wow the meat really pulled back on those babies. I'll bet they were tender & tasty.

Yes I did. I rubbed them the night before with a mix of spices I like and wrapped them in plastic cling wrap. At stage 2 I splashed unsweetened apple juice in the Reynolds Wrap, and the last hour after removing the wrap I would mob (spray) them with apple juice about every 15 minutes are so.

They were fall off the bone tender. If I get the same results from now on, I will be a very happy smoker.
