Well, looks like disaster struck. Hard. In the process of making 12.5 pounds of beef and cheddar snack sticks and the nylon gears on my stuffer snapped. It was a 10+ year old Kitchner 5# stuffer that has served me well. Immediately took the unstuffed product and put it into zip-lock bags and into the fridge. SWMBO gave me the go ahead to get a new metal gear LEM 5# stuffer and it will be here on Tuesday. I did manage to get about 7 pounds stuffed and they will be in the smoker in a few hours. I would like to find replacement parts for the Kitchner. Any ideas?

Lem was selling a kit , that I believe fit those . I say " kit " because it came with the shaft and gears from a Lem . The Kitchner has a different thread pitch , but I think the rest is the same .

Thanks Guys. Kitchner does not offer any parts for this. I will look into the LEM Kit. Worst case, I will use it for a flower planter.

So roughly 5# of meat mixture remains? One option would be to make some skinnies... as in 'skinless' and 'small diameter' meat sticks. It's pretty easy, form into logs 1" to 1.5" in diameter. Wrap in plastic wrap. Tie off one end and twist to get the log really tight, tie off second end. Let sit in fridge (I go 12 hours), then smoke. They do form a rind, but it's totally edible, and they slice just dandy.

I'm not real sure about any of this , so do some research before you buy . I'm not sure if it comes as a kit , or you need to buy both . If I remember right , I read about that on here in an old thread . A guy bought the Lem gears for a Kitchner , then bought the Lem shaft because the Kitchner was a different pitch .

I hate when that happens, when you're all ready!!!
If you ever run into an emergency like that again, you can always make a quick change, to one of my Step by Steps Below:
Unstuffed Beef Sticks (All Beef)
Smoked Bear Logs (All Beef)
