When a client heard last weekend was our 10 anniversary, he went a bought a rack of beef ribs from a butcher that he is beside at a farmer's market. Shows up a few days letter, hands me the package and said "Happy Anniversary"

I seasoned them up last night with brisket rub and put them in the MES 30 at 245F. 3/4 hour later I fired up Oki Joe. 1/2 later, the ribs went in indirect for about 1 1/2 hours.
The meat was well done at about 180F and TASTY. THere was a bit of a breeze so temp control an issue. Nothing like a breeze to take 20 - 40 degrees off! I made a potato salad using potatoes I smoked yesterday while making the pizza.

I really like presents like that! Nice work on those ribs. I smoked some potatoes on the weekend, adds a great flavour and paired with those Ribs = Yum.
