I usually smoke my pork shoulders overnight at 225* in my MES with any amnps. But my daughter is on spring break and have been busy and had a 9# shoulder sitting in the fridge so I decided to throw it on for the day and have it for dinner. I set the smoker to 275* around 8am. Wrapped it which I also usually don’t do when it hit 165*. Pulled it around 5:45 when it hit 203* let it sit for a brief second, and we were eating right at 6:30 so I was happy. Turned out pretty good. Only used some brown sugar and store bought rub it was quick and easy.

No pics of it pulled afte it sat. We ate right away, wide for the kids in th bed and I wrapped and froze the rest. My wife liked it more I think since it was wrapped, the bark was a lot softer.

Looks good Brian! I have a shoulder sitting in the fridge for a nice Sunday cook.
