today i smoked a 8lb butt roast. i used hickory chunks for my smoke. i made Fla Jeff's finishing sauce to go with it. tastes yummy! here is the (food) porn. i rubbed it with mustard, and sprinkled with chili powder, garlic powder, onion powder, cajun seasoning, black pepper, and turbinado sugar last night- wrapping it in saran wrap to set in the fridge over night.
the roast had a nice bark on it when i pulled it out of the smoker. i foiled it at 170° internal, and took it to 200° foiled. i let it rest for and hour and a half before pulling, and it was still steaming when i removed the foil.

Dang, Chris- that bark looks really great!!! That pull pork don't look to bad either! Good Job!

Looks good Chris. I like that pulled pork close up. I almost feel like I am one with the pork.

dutch, thanks for the kind words.
randy, just about. still have a small cough.
chad, lol that was funny.

all, it tasted real good. my wife really liked Fla Jeff's sauce. i will definitely make that sauce every time i smoke pork for pulling.

Chris - I used his finishing sauce on one last weekend. It was to die for. I went light on it for the first time using it, but will not be afraid to use the whole monty on the next one. Now if a guy could just find a good Rub to put on that butt before it gets smoked?????? LOL

That's not what I was hinting at....butt good come back! LOL

lol, i meant we like it, maybe you should try it if you haven't found one you like.
