I am planning on smoking a butt next weekend that I have sitting in the freezer. It's been in there a few weeks and is frozen solid.

How long do you think it will take to defrost in the fridge?

I usually try to allow 3 days..........but it sort of depends on how often the fridge door gets opened and how thorough you want the thaw to be. I don't mind a frozen center when it goes on the smoker.

3-4 days sound good to me...
i just did a 12# butt for the july 4th and i sat it out in the fridge on the 1st of july ...it was fine.....but the 1 thing i did notice when i had it sit out that long in the fridge was when i cut open the cryovac bag boy the smell about knocked me over...all the gas buildup in the bag....wow...smell went away after i washed her up and cut the skin off....

3 days at least, or under the tap for about 3 hrs!

Thanks, 3 days is about what I figured. It's from the butcher, no cryovac so it shouldn't have the odor issues.
