Finally got my new smokehouse working good so now the fun begins
Got some work done yesterday.
In the smoker ready to go
Smoking pretty well. Now is time to start hot dogs and brats
First taste of this year's jalapeño cheese summer sausage.

There's about 160lbs of smoked summer sausage. Jalapeño cheese, hickory, and peppered
Yikes, you sure do sausage-making in a big way! Do you freeze it or give a lot of it away? Well done, and looks mighty good!
We do help other people process there meat but we live on what we process. We don't buy any sandwich meat, jerky, sticks, brats, or hot dogs all year.
Good for you! I like to do the same thing, especially canning veggies and meats.
How do the hotdogs turn out? Are they similar to what you buy at the market? I have a mind to try some but I don't know if I'd like my own as well as the commercial dogs. Not sure if I could get the texture correct.

Now that's what I'm talking about, great job. Sausage making is something I enjoy but I have never made that much at one time. Do you have a post about your smokehouse?
