Curious as to what the minumum size Steel thickness should be to build a Horizontal Offset Smoker. Wood and Charcoal would be my Heat Source in the Firebox.

Also, could you get away with using a thinner sized piece of Steel as an insert of the FB since it will be offset?

Before anyone chimes in with "get an old Propane Tank", that's not available in SE Asia at the sizes I'm needing🤣

The thicker the steel, the better it will maintain temperature. Plenty of smokers are make out of 1/8" steel. Thinner than that, an offset is going to feel flimsy in my opinion.
Maybe you can't find propane tanks, but there must be industrial tanks there. We've seen folks use oil tanks, air compressor tanks, and other random tanks that came from who knows what. Of course nothing wrong with using raw materials if you can find for reasonable price.

I've used a 1/4" thick steel offset for over 25 years. Works fine. I guess it depends on how big of a smoker you are talking about building.

1/8" steel would be about .3175cm. I am sure I could find that a fairly reasonable price out here. I would be nervous about going too thick as it would be unbearably heavy for the purposes I'm thinking of. Thanks for your response😁
