Maybe this is common knowledge, or not....
My usual shoulder smoke takes 10-12 hours (6-8lbs). I found by cutting the pieces into 2lb chunks, it cuts the cook time by 3-4 hours, provides more surface area to smoke, and tastes no different. I saw this on Food Network actually, tried it, and it seems to work good.
Is there a downside to this method? Not sure why I have not read about it thus far? Cutting 4 hours off the smoke is a huge time saver.
