Hey guys, I pulled my first soprasatta today, it was at about 25% weight loss. Everything looked good but it felt just a little to soft. Safe to eat ? Hope so, I had 2 slices . What do you guys think.
 
Was that umai ? I don't see a problem eating it. I made some few months ago and let it go till it lost about 38% moisture and liked it then. I think drying it more intensify the flavor. If you like it your way go for it. After all its you eating it .
