I am interested in Curing and smoking a whole turkey. I have smoked many but haven't cured. After researching I planned on using Pop's cure recipe and was planning on injecting based on the data I saw on this forum.

My question for this group is 3 fold.

1. Has anyone done this and was is it good?
2. How does the pre-brined solution that the turkey has alter or effect my curing solution (do i adjust any of the ingredients?) or time. I was planning on 3 days.
3. I wanted to get thoughts on adding STTP and was curious on peoples thoughts.

thanks in advance

I have done it using pops brine it was good and different it does give it a hammy flavor not bad just different. As far the pre brined that’s what I used havent used one that isn’t. Sorry can’t help on #3 good luck, three days is fine I think that’s what I did

I think you'll be fine with your plan, the only thing is trying to get the skin a little crispy and not like rubber, you'll need some higher heat for that. You didnt mention what temps your smoking at.

My opinion is you don't need stpp with this .

I would start here ,
Use your pre brined turkey .
Mix up Pop's brine in this ratio ,
I gallon water
1/2 cup kosher salt
1/2 cup brown sugar
1/2 cup white sugar
1 TBLS cure 1
I tsp orange extract . ( I've also used lemon , or you can skip it )

Inject and hold overnight .
Cook at 325 or 350 .
