Cured and Smoked Ham Hocks?

Cured in pop's low salt brine for a week. Smoked at 225 with tube until 165. In the past I have done them to 145 but they did not get tender like the store bought in a pot of beans so decided to try 165 this time. Friend gave me some Colorado Pinto Beans. Some of these should make a good pot of beans.

Those look great . Perfect color on them . Used to be able to buy fresh hocks and shanks here , but haven't seen them in a long time .

Look great. Happy you can get raw pork hocks. I don't find them.
Have you considered smoking to 140° and dropping in SV at 140° for 24 hours?

They have them at Kroger here. Sometimes you have to ask guy in back to get some.
