Yup. Beef country style ribs. Cook time 5ish hours. Holy gospel seasoning. Sauce at the end. Tat bit dry but tasted great. Nice little smoke ring. My pictures suck but here they are.

I will say if you really want a great wifi therm, fire board is amazing. This camp chef puts out a lot of smoke if you want it. People say pellet smokers don't put out much smoke, this one does. You can set the smoke level and temp separately.
This wasn't my best cook but I like to post "almost" a fail cooks too.

Almost fail? Looks dang good to me, I’d eat your failed smokes any day my friend! Never thought you’d say anything positive about a pellet smoker.

CSR: Keep moist
What I have done is keep the ribs close together
and stack crosswise a 2nd layer going the other way, leaving a gap for smoke and heat
similar to a campfire squared off.
the ribs will self baste each other.
When its time to check ?
Sauce up and rotate the ribs, bottom to top and
Put the well cooked surface inwards and let the under cooked take its space.
Also use apple juice in a pan to help it be moist.
Towards the end sauce it up heavy and turn up the heat ?
Yurs looked Great! I would just sauce up !
