Hi guys!
Had some awesome left over cranberry sauce that I put to use on some tenderloins.
The cook:
brine the tenderloins for 8 hours in fridge (1/2 gal water 1/2 cup salt 1/2 cup sugar 2tbs pork rub)
remove from brine and rub them
put in fridge overnight
remove from fridge let them get to room temp
preheat smoker 250 f
apple wood chips and chunks
put tenderloins in smoker for 45 min of smoke
preheat oven in house to 350 F
put tenderloins in oven at 350 F until internal is 150 F then take out of oven glaze with cranberry sauce put back in oven for ten minutes to caramelize the glaze
Homemade Cranberry sauce
[h2]remove from oven let sit for 10 - 15 [/h2][h2]slice............[/h2]
They were cooked real nice, flavor was mildly sweet with a hint of smokey goodness.
