Couple tenderloin, couple ribs/stickburner in the rain

Marinated this stuff this time in concentrated oj. Drained the marinade off after letting it sit about 5 hours and added rub when it was on the smoker on the top sides. I added rub to the marinade so it's got some everywhere on it. Smoking with apple and plum wood. Left one rib unseasoned so u can see the nice meat. It did get rub tho

Nice fire going, pry going to mainley use plum. I like how it burns very slow and doesn't give off to much heat like oak. I'm going to add another 4" stack soon so I can run the oak

Smoked it low and slow at 175-200. Tenderloin is done here at 2 3/4 hours and took it to 138. Put in tin foil then put butter on it and in cooler. Ribs are only at 167. They will pry go 4+ hours. Usually they go 3 hours at 250.

All done, wasn't very happy at all with the texture of the meat. Way too mushy for me. Just checking it out tho. I went a little long at 5 hours. Usually it's 2 hours. I think that's what did it. I'll try heating it up fast tomorrow or next day to try and get some texture back

Here we go. Internet was slow last night. Those are all natural juices. Tenderloin coming next

Smoker pics, this was end of night letting fire go out. May get some redemption today on the smoker. Just not sure what yet
