So i did my first snack sticks. Came out pretty good. I don't have a stuffer yet so I used SmokinAl's pepperoni recipe with Bearcarver's (Get well soon!) procedure for unstuffed sticks. (I only had cure #1 on hand so I looked for a recipe that used that as opposed to TQ).
I used my jerky gun and pumped them right onto the racks.
They sure weren't pretty pre-smoke! I thought they looked like "Dookie Sticks!"
Looked much better when done!
So, onto my questions:
Can any snack stick recipe be done unstuffed?
Can summer sausage recipes be used for snack sticks? I'm especially interested in trying a jalapeno cheese recipe but worried that the cheese may melt out with no casing.
Can someone share a teriyaki stick recipe that uses cure #1?
