I've recently found a Traulsen Fridge that I was really excited about converting to a smoker. The size is perfect for what I'm looking for. I did a little research and have recently learned that the insulation won't withstand the heat and will produce hazardous off-gassing. Nevrsummr has a thread on this exact refrigerator here:

http://www.smokingmeatforums.com/t/239499/traulsen-commercial-refrigerator-build  (Relevant pictures on page 4 of his thread)

It appears that it won't be too difficult to remove the insulation, but there is a challenge that he has brought up in his thread. The insulation on this fridge basically holds the interior body in place. I still think this is a promising build, but I was hoping I could get some brainstorming going on how to support the body of the fridge while still allowing for the ability me to install the Roxul insulation. Thanks for any feedback.

Hello Jeremy.  This one is easy.  The only problem you have is the space below the interior body.  Just use some wood blocks to equalise the space between the top and bottom.  Pack the bottom with Roxul.  Pack it tight then remove the wood blocks.  Center the inner body left and right and then pack the rest of the area TIGHTLY with Roxul.  The inner body will not move after that.  Tamp it in there with a broom handle or something and make it solid.  You'll be fine.  Keep Smokin!

Thanks for the feedback Danny! this gives me the confidence to give it a shot. I'm paying $80 for the fridge. I'm not sure if that's a good deal or not. I guess it all depends if I can make it work, haha. Have a good day!

it ain't gonna work if ya don't try...   GL and let us know how it goes..

Check with the maker to find out what the insulation is.  The insulation is very likely polyisocyanurate which is good from -290 to 300 degrees Fahrenheit (-180 to 150 C).  Depending on the location and type of your heat source you are probably fine with it as built unless you really want higher than traditional temperatures.
