I was grazing at Costco today (Pittsburgh area) and noticed that they have vac packed tri-tips for $5.99 a pound. I picked one up, it already is marinated and rubbed in something. I am gonna dry it off, rub it with a little kosher salt and coarse black pepper and use the reverse sear method after it gets up to 125-130. I just finished rebuilding my 1946 Globe Slicer so i think this will be a nice test for it.
