Hey Everyone -

I haven't posted in a little while but I have done a lot of smoking. Smoked a pork butt last Thursday and it was my best one yet.

Last night I smoked 5 lbs of tri-tip purchased from local Costco. It was already marinated so I didn't add any rub. I used a combo of red oak and cherry wood (70/30 combo). It took about 1.5 hours to smoke and then I reversed seared on a grill. I cooked it medium rare to about 137 degree. We enjoy our meat pink/red in the middle.





For dessert my wife made a cream cheese pound bundt cake

Great lookin plate right there! I just went to Costco yesterday and looked at one of those tritips. How did you like their marinade?

I thought it was pretty darn good. Not as spicey as Bill Bailey's Santa Maria tri-tip but still flavorful. I personally would choose the Costco marinated tri-tip over Bills.

We had 5 lbs of it feeding 6 adults and 4 children. There was barely any left so I couldn't make any sandwiches for today. Another good sign that everyone enjoyed it.

Oh yeah, 1 more thing. The butcher at Costco left the fat cap on both pieces so I smoked it fat side up in the MES. I don't think with the Bailey's the fat cap is left on but I could be wrong. The meat came out really juicy and buttery too.
